Cabbage has a GI of 10 – anything less than 55 is considered low. Which means cabbage, like most fibrous veggies, is mega-low. We made this pizza and shared it with some teenagers. It got the stamp of approval. And it lasted a few days because just one serving is HUGE. Delicious and the perfect pizza pie for managing your insulin resistance.

Enjoy pizza! You really can when you take the time to make the crust low-GI with the use of grated cabbage, egg whites, and psyllium. This one is teenager-approved! Use pickles or capers to give it a delicious zing. It will soon be your favorite BBQ pizza. Enjoy this mama mia pizza for managing your insulin resistance.

Instructions

  1. Preheat oven to 425F / 220 C.
  2. Spray a cookie sheet or pizza pan with cooking spray or line it with parchment paper.
  3. In a large bowl, microwave the cabbage with a splash of water for 10 minutes and let it cool. Squeeze out any water using a kitchen towel.
  4. Once the cabbage is cooked, mix all crust ingredients together. Spread on pizza pan and bake for 20-25 minutes or until edges are golden brown.
  5. Remove the crust from the oven. Set oven temp to 500F / 260C degrees.
  6. Spread BBQ sauce on the crust and add the rest of the toppings.
  7. Place the pizza back in the oven for 5-7 minutes.
  8. Remove from the oven. Enjoy!

Note

Adding jalapeños and crushed red pepper flakes would add some zip to the pizza. Account for any additional calories.

If fat free mozzarella cheese is not available in your area, use reduced fat and adjust the calories.
