The mushroom and zucchini give perfect balance to this cheesy shrimp. Simplify your weeknight dinner with a spectacular, all-in-one seafood bake that delivers premium comfort with minimal cleanup. This Sheet Pan Shrimp features a highly nutritious layout of shrimp, thinly sliced fresh shiitake mushrooms, and a medium zucchini sliced thinly crosswise. Tossed together on a single baking sheet with olive oil, thinly sliced shallot, and finely grated garlic, the dish is seasoned with sweet paprika, red pepper flakes, herbes de Provence, kosher salt, and black pepper. To create an irresistible savory crust, the ingredients are coated in a light mixture of unsweetened almond milk and coarse oat bran, then topped with shredded low-fat, low-moisture mozzarella and finely grated low-fat Parmesan cheese before baking to a bubbly, golden-brown finish. Served with fresh lemon wedges for squeezing over the top, the mushroom and zucchini give perfect balance to this cheesy shrimp.
Standard sheet-pan bakes or seafood gratins frequently rely on high-glycemic traps like panko breadcrumbs, regular white flour binders, or a side bed of quick-cooking white rice. These refined starches hit the digestive tract rapidly, causing a sudden surge in blood glucose followed by an intensive insulin spike and an early evening energy slump. This recipe offers a brilliant, health-conscious alternative. By utilizing fiber-dense, unrefined oat bran for the crisp coating and building the bulk of the meal from non-starchy summer vegetables, you can dive spoon-first into an authentic, cheesy seafood gratin while maintaining completely flat, predictable metabolic energy boundaries.

Synergistic Effect
The outstanding blood sugar stability achieved by this weeknight bake relies on the beautiful structural synergy between dense marine proteins, healthy lipids, and unrefined dietary fiber. Shrimp provides a solid foundation of pure, lean protein, which naturally pairs with the melting fats found in low-fat mozzarella, Parmesan, and olive oil. When this protein-and-lipid complex is combined with the soluble fibers in the coarse oat bran coating and the insoluble plant fiber within the zucchini and shiitake mushrooms, gastric emptying drops significantly. This powerful combination ensures that any natural starches dissolve gently into your system, resulting in an absolute flat post-dinner glucose curve and hours of clean, steady physical fuel.
Sheet Pan Shrimp (Low-GI Cheesy Garlic & Herb Seafood Bake)
Description
Yes. When you are eating for health, sometimes cheese is allowed. The fat-free and lowfat varieties are 'sometimes' foods. Which means we don't have them every day. But life is short, so we do have them. This combo with shrimp and vegetables is topped with oat bran, which doesn't deliver a crunchy texture, but more tenderness and a grain that this dish is complemented by. We had it 4 days in a row and loved it every day.
Ingredients
Instructions
-
Heat oven to 425 degrees F / 218 C.
-
In a large bowl, toss together the shrimp, zucchini, mushrooms, shallot, garlic, paprika, red-pepper flakes, ½ teaspoon herbes de Provence, ¾ teaspoon salt, ½ teaspoon black pepper and 1 tablespoon oil until well combined. Transfer to a 9-by-13-inch sheet pan or shallow baking dish in a single layer.
-
In the now-empty bowl, toss the oat bran with a pinch of salt, the remaining 2 tablespoons oil and ¼ teaspoon herbes de Provence to combine. Evenly pour the almond milk over the shrimp mixture in the pan, covering all the nooks and crannies. Sprinkle the oat bran mixture over the shrimp, then top first with the mozzarella, followed by the Parmesan.
-
Bake until it is bubbling and the oat bran and cheese are light golden brown all over, 10 to 15 minutes. Remove from the oven and let rest for 5 minutes before serving with the fresh lemon wedges, which should be squeezed over the gratin just before serving.

This dish should almost be considered a treat due to its cheese and oat bran, but the veggies keep it wholesome feeling. I ate it a few nights in a row, warming the leftovers in the microwave, and loved it.
