This one is a show-stopper for your eyes as well as palate. Perfect for breakfast or any meal side. Bring a touch of rustic, countryside elegance to your table with a beautifully delicate entree that celebrates fresh, seasonal produce. This Zucchini Flan features a mountain of tender zucchini slices layered elegantly in a baking dish lightly misted with olive oil cooking spray. The vibrant green slices are bathed in a rich, velvety custard whisked from whole large eggs, extra egg whites, and unsweetened plain almond milk. Seasoned with salt, black pepper, a warm pinch of grated nutmeg, chopped fresh thyme, and a few torn basil leaves, the flan is topped with a dusting of grated fat-free cheddar cheese and baked until set and golden brown. The result is a light, cloud-like custard slice with beautifully tender, aromatic layers.

Traditional vegetable flans or quiches are heavily reliant on blind-baked pastry crusts, heavy cream, and white flour fillers to stabilize the custard. These refined, high-carbohydrate additions trigger sharp spikes in blood glucose and standardly lead to a heavy, mid-afternoon energy crash. This recipe offers a brilliant, metabolically optimized alternative. By stripping away the high-carbohydrate flour and heavy pastry crust entirely, and relying on lean egg proteins and unsweetened almond milk to create a delicate set, you get to enjoy a comforting savory slice that keeps your insulin levels completely at peace.

Unsweetened Almond MilkVery Low (approx. 25)Emulsifies the egg matrix into a rich, pourable custard base with minimal carbohydrates or calories.
Fat-Free Cheddar CheeseLowProvides a savory, melted golden-brown topping with a minimal glycemic footprint.

Synergistic Effect

The culinary and metabolic success of this savory flan relies heavily on the structural synergy between non-starchy vegetable fibers and dense egg proteins. Zucchini provides a high volume of structural plant fiber, which creates a bulk-forming matrix inside the digestive tract. When this fiber-rich base is encased in a highly bioavailable protein custard made from eggs and egg whites, your body’s overall rate of digestion slows down significantly. This powerful combination delays gastric emptying, ensuring that any nutrients enter your bloodstream at a steady, measured crawl. The result is a beautifully flat post-meal glucose curve and hours of clean, sustained focus.

Description

We intended this zucchini dish to be a dinner side, but it is very much an egg breakfast. Don't let the zucchini 'blanching' scare you off. Blanching is super-easy once you try it once and it's not time consuming as you can blanche lots of zucchini at once. The result is vibrant green, tender-cooked zucchini slices you can beautifully fan across the pan for an impressive presentation with very little work. Now, here's the good part: We loved this recipe and enjoyed it for several days in a row, warmed up in a frying pan. Not only that, our teenagers loved it and one even asked for the recipe. That is a ringing endorsement. Enjoy!

Ingredients

Instructions

  1. Heat oven to 375 F / 190 C. Bring a large pot of salted water to boil. Add zucchini and blanch for 1 minute. Drain and spread zucchini out to cool on paper towels. Season lightly with salt and pepper.

  2. Beat egg and egg whites with almond milk and ¾ teaspoon salt, then add nutmeg, thyme and basil leaves.

  3. Spray a large, low-sided baking dish with olive oil spray, and arrange blanched zucchini across the bottom. Scatter cheese over zucchini, then pour in the egg mix.

  4. Bake for 35-45 minutes or until the egg is still a bit jiggly, but an inserted knife comes out clean. Cool to room temperature before serving.

Note

We mixed the almond milk and eggs with a mixer for almost 5 minutes to give it the best chance to achieve a custard-like consistency. Almond milk will never perform as well as regular milk when it comes to this.

This dish was initially intended as a side. But the serving is huge, so we reconsidered it as a breakfast. Of course, you can halve the serving size and enjoy it as a side as well. The eggs are light and smooth as in a flan. The cheese is an accent rather than a main event. Line up your zucchini rounds in the bottom for a presentation-worthy effect. A gorgeous and wholesome start to any day.
