Craving shrimp pasta? Have we got a winner for you. 😉 Transport your senses to a sun-drenched Italian coast with a brilliantly fresh, light dish that elevates traditional seaside flavors into an elegant dinner. This Shrimp Spaghetti al Limone features a generous pound of large, succulent peeled and deveined shrimp sautéed smoothly in a blend of rich ghee and premium olive oil. Tossed with delicate spaghetti-style shirataki (konjac) noodles, the pasta is bathed in a bright, shimmering sauce reduction made from fat-free chicken broth, white wine vinegar, packed lemon zest, and fresh lemon juice. Infused with chopped fresh tarragon (plus more for serving) and finished with a dusting of freshly grated low-fat Parmesan cheese, this dish balances a bright citrus pop with savory depth.

Traditional pasta dishes are heavily dependent on refined semolina wheat flour, which floods your system with fast-acting carbohydrates. This high-glycemic intake triggers immediate, massive blood glucose spikes and subsequent insulin surges, leaving you feeling sluggish, bloated, and hungry shortly after dinner. This recipe offers a spectacular, health-conscious alternative. By replacing standard pasta with virtually calorie-free, zero-carbohydrate shirataki noodles, you get to twist a full bowl of luxurious, lemony spaghetti onto your fork while keeping your metabolism perfectly calm and steady.

Synergistic Effect

The exceptional glycemic control of this coastal dish is rooted in the powerful synergy between dense marine proteins and highly viscous soluble dietary fiber. Shirataki noodles are composed of glucomannan, a unique plant fiber that absorbs vast amounts of water to form a thick, protective gel matrix within the stomach. When this slow-moving fiber gel combines with the premium protein from the sautéed shrimp and the healthy fats from the olive oil and ghee, your overall rate of gastric emptying drops significantly. This structural delay ensures that nutrients are absorbed at a measured crawl, resulting in an absolute flat post-dinner glucose curve and hours of clean physical energy.

Description

This dish is lemony, fresh, and delicious. We had it several days in a row and the smell of it cooking or being re-heated is divine. Credit must be given to the ghee in the end that sends that buttery scent through the kitchen. It's not necessarily Italian, but mama mia! Serve with a large side salad or toss in some veggies.

Ingredients

Instructions

  1. Drain the Shirataki noodles in a colander and set aside.

  2. Pat the shrimp dry and season them with salt and black pepper. Combine the olive oil, lemon zest (setting a few pinches aside for serving) and tarragon in a large skillet set over medium heat. When the oil is hot, cook for 1 more minute, until the zest and tarragon are fragrant but not browned.

  3. Add the shrimp to the skillet and spread into an even layer. Cook for about 90 seconds on each side, or until just cooked through. Transfer the shrimp to a plate and set aside.

  4. Mix ½ a cup of the chicken broth with the white wine vinegar. Add the vinegar-broth, 1 teaspoon salt and a few grinds of black pepper to the skillet, and bring to a simmer, scraping any browned bits from the pan. Cook until the broth has reduced by about half.

  5. Add the Shirataki noodles and rest of the chicken broth to the skillet. Cook over medium-low heat for 2 to 3 minutes, tossing often, until the liquid that has collected at the bottom of the skillet has reduced slightly.

  6. Add the ghee and toss until well blended. Add the lemon juice and  shrimp, toss, then season with more salt and black pepper to taste. Divide among shallow bowls and sprinkle with cheese. Garnish with chopped fresh tarragon, lemon zest and black pepper.
