Melt coconut oil in small saucepan over low heat. Whisk in hot sauce, brown sugar, and vinegar until combined. Remove from heat and cover to keep warm; set aside.

Heat oven to 400°F / 204°C. Line a rimmed baking sheet with parchment paper or grease with cooking spray.

Combine psyllium husk, oat bran, ½ teaspoon salt, and ¼ teaspoon pepper in a small bowl. Whisk almond milk and hot sauce together in large bowl. Add cauliflower; toss to coat well. Sprinkle psyllium husk mixture over cauliflower; mix until thoroughly coated.

Spray olive oil on a large frying pan over medium high heat. Add the cauliflower to the pan, browning and flipping until all sides are lightly browned. (Cauliflower will cook thryough in the oven.)

Transfer ½ cup of buffalo sauce to a large bowl, add fried cauliflower and gently toss to coat. Spread cauliflower out on prepared baking sheet. Bake for 25-30 minutes, until soft. Serve immediately with yogurt dipping sauce and remaining buffalo sauce.
