A lemon ‘butter’ inulin resistance-friendly chicken crowd-pleaser. This chicken recipe is great for family and guests. Chicken Française is an Italian-American dish of flour-dredged, egg-dipped, sautéed chicken cutlets with a lemon-butter and sherry or white wine sauce. The dish is popular in the region surrounding Rochester, New York, where it is known as Chicken French, to the point that some have suggested the dish be called Chicken Rochester. The key to low-GI breading is ground oat bran. Ground oat bran has a low glycemic response and decreases the glycemic response.

It’s a brilliant, metabolic-friendly transformation of a beloved restaurant classic. Traditional Chicken Français relies heavily on a thick coating of white flour and pools of butter, which can trigger rapid blood sugar spikes and subsequent energy crashes. This refined, elegant version completely swaps the high-GI elements out for high-fiber, finely ground oat bran and rich, lactose-free ghee. The result is a beautifully golden, delicate crust that locks in the juices of the tender chicken breasts, all bathed in a bright, savory lemon-garlic pan sauce. It delivers all of the luxurious, velvety flavor of the classic Italian-American bistro dish, entirely optimized to support stable, steady blood sugar.

Glycemic Index (GI) Breakdown for Key Ingredients

IngredientGlycemic Index (GI)Glycemic Category & Metabolic Impact
Boneless, Skinless Chicken Breasts0Low (Zero) – Pure protein that contains no carbohydrates, providing a powerful metabolic baseline that stabilizes insulin levels and keeps you full.
Oat Bran (Ground Fine)~50 to 55Low – A brilliant substitute for white flour (which has a high GI of 70+). Oat bran is exceptionally high in beta-glucan soluble fiber, which actively slows glucose absorption into the bloodstream.
Ghee & Olive Oil0Low (Zero) – High-quality, healthy fats contain zero carbohydrates. They act as an elegant digestive brake, slowing down gastric emptying to flatten any potential glycemic curve.
Egg Whites0Low (Zero) – Pure, clean protein used for the dredging batter, adding zero glycemic load while helping the oat bran crust crisp up beautifully.
Fresh Lemon Juice~15Very Low – Aside from being incredibly low-carb, the natural citric acid in lemons lowers the glycemic response of the entire meal by slowing down starch digestion.
Fresh Parmesan Cheese0Low (Zero) – Aged cheese provides rich, umami depth, healthy fats, and protein with no impact on blood glucose levels.
Garlic, Broth, Parsley, & Hot Sauce~0 to 15Very Low – These foundational aromatics and flavor builders infuse the glossy sauce with incredible depth for negligible carbohydrates.
