This Ultimate BBQ Chicken Pizza for Insulin Resistance completely changes the game by proving you don’t have to sacrifice your favorite comfort foods to maintain stable blood sugar. Traditional pizza crusts rely on refined white flours that act like pure glucose in the bloodstream, triggering sharp insulin spikes. This brilliant, gourmet reconfiguration uses a base of finely shredded cabbage, liquid egg whites, oat fiber, and psyllium husk to create an incredibly low-glycemic, fiber-rich crust that bakes up beautifully. Topped with lean, protein-packed chicken breast and savory ham, melted fat-free mozzarella, a punchy hit of briny capers, and a rich, sugar-free BBQ sauce, this pizza mimics a high-end bistro flatbread while keeping your metabolism perfectly calm, full, and satisfied.
Cabbage has a GI of 10 – anything less than 55 is considered low. Which means cabbage, like most fibrous veggies, is mega-low. We made this pizza and shared it with some teenagers. It got the stamp of approval. And it lasted a few days because just one serving is HUGE. Delicious and the perfect pizza pie for managing your insulin resistance.
Glycemic Index (GI) Breakdown for Key Ingredients
| Ingredient | Glycemic Index (GI) | Glycemic Category & Metabolic Impact |
| Finely Shredded Cabbage (Crust) | ~10 | Very Low – Sitting at the absolute bottom of the scale, cabbage replaces traditional dough with massive amounts of gut-friendly volume and fiber, preventing any rapid glucose response. |
| Oat Fiber & Psyllium Husk Powder | 0 | Low (Zero) – These are almost purely non-digestible, soluble fibers. They create a fantastic binding texture for the crust while acting as a metabolic anchor that slows down the absorption of the entire meal. |
| Chicken Breast & Uncured Ham | 0 | Low (Zero) – Pure, high-quality proteins that stimulate satiety hormones without impacting your blood sugar or demanding an insulin response. |
| BBQ Sauce (No Sugar Added) | ~15 | Very Low – Standard commercial barbecue sauces are packed with sugar and high-fructose corn syrup, but choosing a no-sugar-added variety completely bypasses the glycemic spike. |
| Fat-Free Mozzarella Cheese | 0 | Low (Zero) – Delivers rich, satisfying savory flavor and a punch of protein with zero impact on glucose levels. |
| Liquid Egg Whites | 0 | Low (Zero) – Acts as a clean, protein-rich binder for the vegetable crust, contributing structure with zero glycemic load. |
| Capers, Garlic, & Seasonings | ~0 to 15 | Very Low – These high-flavor add-ins bring a briny, sophisticated edge to the pizza with negligible carbohydrates. |
