Description

Enjoy Low-GI Grilled Pineapple Salsa! Featuring smoky grilled pineapple, crisp jicama, jalapeño, lime juice, and fresh mint. Formulated for insulin resistance, PCOS, and long-lasting satiety.

Ingredients

Instructions

  1. To prepare pineapple, twist off leafy stalk and discard. Using a sharp chef's knife, cut off top and bottom. Set pineapple on flat bottom, and cut skin away from exterior. If any sharp or fibrous pieces of peel remain, cut them out. Cut pineapple in half lengthwise, and set each half, flat side down, on cutting board. Cut each half into ¼-inch-thick half moons.
  2. Heat a grill or grill pan to high. Grill pineapple halves 30 seconds on each side, just long enough to create grill marks, but not cook pineapple. Work in batches, if necessary. Remove to cutting board and dice into ¼-inch cubes. (You need 1 cup / 240 ml of diced grilled pineapple for salsa.) If you don't have enough at this point, grill more pineapple and dice until you have enough. Refrigerate any unused pineapple.
  3. Add 1 cup / 240 ml diced grilled pineapple to a medium bowl. Add rest of salsa ingredients and stir to combine. Any unused salsa can be refrigerated, covered, for up to three days.
