Ingredients

Instructions

  1. In a small bowl, whisk together all ingredients except pork and pour into a large plastic zipper bag. Add pork loin, press out air and seal tightly. Distribute glaze around tenderloin until thoroughly coated. Place bagged tenderloin in a small container to catch any drips and place in the refrigerator to marinate between 2 hours and overnight.
  2. After marinating, remove tenderloin from fridge and bring to room temperature. Preheat the oven to 425°F / 220°C. Remove tenderloin from zipper bag and allow marinade to drip off into bag. Place tenderloin on a baking sheet or in a baking pan lined with aluminum foil, for easier cleanup. Reserve marinade and set aside. Roast tenderloin in oven until well browned and cooked to desired doneness, 15 to 17 minutes for medium rare, 17 to 20 minutes for medium. Remove from heat and let rest for 10 minutes to allow juices to be reabsorbed and temperature to reach 160°F / 71°C.
  3. While tenderloin rests, pour reserved marinade into a small saucepan and place on stove over medium-high heat. Bring to a gentle boil and cook for 1 minute until slightly thickened, swirling the pan. Immediately remove from heat and set aside. (The marinade is completely safe to eat once boiled.) To serve, thinly slice the tenderloin at an angle across the grain. Pour cooked marinade over top and serve.
