Note

Flavor & Spice Tip: When it comes time to add the chipotle pepper and adobo sauce, add a little and taste the potatoes. Then add a little more and taste. The dish can become overwhelmed with chipotle very quickly, so to find the flavor that perfectly aligns with your individual taste, tread lightly! ;)

Taste note: For the best flavor, substitute salted butter for the olive oil, or omit the olive oil and add a little pat of butter when serving. Take care to count your butter calories and fat grams - but if you can afford it, it’s a taste-raiser. :)
