Shakshouka is such a gorgeous, inherently low-glycemic dish. Because it relies heavily on healthy fats from olive oil and a rich base of fibrous vegetables, it’s a natural champion for stabilizing blood sugar. Plus, baked eggs bring the exact protein punch needed to make it a perfectly balanced meal. The word, shakshuka means “mixture” in Algerian Arabic, and “mixed” in Tunisian Arabic. In English, it just means delicious. And great for managing your insulin resistance.

Glycemic Index Profile

IngredientGlycemic Index (GI)Load / ImpactRole in Metabolic Health
Eggs0NoneA superior source of complete protein and healthy fats that stabilizes hormones and prevents glucose fluctuations.
Canned or Fresh Tomatoes15Very LowRich in lycopene and essential vitamins, tomatoes form a thick, savory base with an exceptionally low carbohydrate density.
Bell Peppers & Onions15Very LowPacked with dietary fiber and cell-protecting antioxidants that promote a healthy gut microbiome and slow digestion.
Extra-Virgin Olive Oil0NoneA robust monounsaturated fat that reduces systemic inflammation and slows down gastric emptying.
Garlic & Warm Spices (Cumin/Paprika/Chili)5–15Very LowSpicy capsaicin and bioactive compounds help support insulin sensitivity and fire up metabolic health.

The Synergistic Effect: Maghrebi Shakshouka is a naturally perfect dish for managing insulin resistance. Because the tomato and pepper sauce is cooked down with extra-virgin olive oil, the non-starchy vegetable fiber combines with healthy lipids to coat the digestive tract. When the eggs are poached directly into this rich mixture, the protein and fat matrix completely insulates the minimal carbohydrates present, ensuring a perfectly flat post-meal glucose response and deep, lasting morning energy.
