Both zucchini noodles (zoodles) and shirataki noodles are famously near-zero-carb, making this an incredible, ultra-low-glycemic meal that completely eliminates the worry of a blood sugar spike. Zucchini noodles have virtually no glycemic impact and work well with Italian-style sauces. Shirataki noodles or konjac contain a beneficial type of soluble fiber called glucomannan that isn’t digested in the small intestine. With almost no usable carbohydrates, shirataki noodles don’t cause blood sugar to rise and have a glycemic index of 0. What they do have is that pasta mouth feel, which is a weird way to describe it but makes it a very satisfying alternative to blood-sugar-raising noodles. A lot of zucchini ‘noodle’ recipes can leave you a bit underwhelmed, but mixing the zoodles with shirataki gives disguises the vegginess of the zucchini so that eating your veggies has never felt so indulgent. 🙂 Delicious and good for overcoming insulin resistance.

In our humble opinion, it’s an absolute masterpiece for managing metabolic health. Traditional wheat pasta is notoriously high-glycemic, quickly breaking down into simple sugars that cause aggressive blood sugar spikes and heavy insulin demands. This recipe completely bypasses that roller coaster by combining crisp, fresh zucchini spirals with gelatinous shirataki noodles. Shirataki noodles are made from the konjac yam and are composed almost entirely of glucomannan, a soluble fiber with a glycemic index of near zero. Tossed with lean, smoky uncured turkey bacon, sweet sliced onions, and a vibrant sauce of chopped tomatoes, this dish gives you the rich, comforting volume of a massive bowl of pasta with practically zero impact on your glucose levels. Finished with a pinch of red pepper flakes for a gentle, warming heat, it is a satisfying, nutrient-dense meal designed to support stable energy and optimal insulin sensitivity.

This recipe is so darn good. Zucchini noodles and Shirataki noodles are okay separately, but when paired together, the texture and bulk is magical! You're filling up on zucchini goodness but you've got that pasta feeling thanks to the Shirataki. Add copious amounts of turkey bacon protein and this one's a winner for the hungriest lady.

Ingredients

Instructions

  1. In a strainer, add zucchini noodles and a little salt. Let sit for 20 minutes to sweat out excess water.

  4. Smash the tomatoes in the pan, add the zucchini and shirataki noodles, and mix until coated with sauce. Add a little water if the zucchini is too dry or if you would like a little soup. Adjust the seasoning to your liking. Let simmer until the desired tenderness of the zucchini is reached.
