Heat oven to 350 degrees C / 176 C. Spray a 9-by-9-inch pan, and then line with parchment paper. (Or cook 10 minutes less in a larger sheet pan, for a thinner cake.)

In a large bowl, whisk together ground oat bran, erythritol, baking soda and salt. Whisk in bananas, yogurt, sour cream, erythritol ‘brown sugar,’ egg, egg whites, and vanilla.Â

Scrape mixture into a baking pan and smooth the top. Bake until the top springs back when lightly pressed in the center, and a toothpick inserted in the center comes out clean, about 25 minutes (or 15 minutes if using a large sheet pan). Let cool completely.Â
